A sweet, citrusy side dish! Our Orange Praline Yams is a yummy twist on the traditional holiday yams, and features fresh orange juice and zest, brandy and a brown sugar praline topping.

Ingredients

  • 1 40 oz. can Bruce’s Yams Cut Sweet Potatoes; mashed and drained (reserving 1/4 cup syrup)
  • 3 tbs. melted unsalted butter
  • 2 tbs. heavy cream
  • 2 egg yolks
  • 1/3 cup fresh orange juice
  • 1 tsp. freshly grated orange zest
  • 2 tbs. brandy
  • 2 tbs. brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. ground ginger
  • 1/2 tsp. grated nutmeg

Praline topping:

  • 1/2 stick unsalted butter
  • 1/3 cup light brown sugar
  • 1/2 tsp. salt
  • 1/3 cup chopped pecans

Instructions

  • Heat oven to 350°F.
  • Place Bruce’s Yams Cut Sweet Potatoes, butter, cream and egg yolks in a mixing bowl and beat until smooth.
  • Stir in reserved syrup, orange juice, orange zest, brandy, brown sugar, salt, pepper, ginger and nutmeg. Transfer to a 2 quart casserole dish; set aside.
  • In a separate bowl, stir together all praline toppings and spread evenly over top of casserole.
  • Bake for 40 minutes until hot and bubbly.
