Ingredients
140 oz. can Bruce’s Yams Cut Sweet Potatoes; mashed and drained (reserving 1/4 cup syrup)
3tbs.meltedunsalted butter
2tbs.heavy cream
2egg yolks
1/3cupfresh orange juice
1tsp.freshly grated orange zest
2tbs.brandy
2tbs.brown sugar
1/2tsp.salt
1/2tsp.black pepper
1/2tsp.ground ginger
1/2tsp.grated nutmeg
Praline topping:
1/2stick unsalted butter
1/3cuplight brown sugar
1/2tsp.salt
1/3cupchopped pecans
Instructions
Heat oven to 350°F.
Place Bruce’s Yams Cut Sweet Potatoes, butter, cream and egg yolks in a mixing bowl and beat until smooth.
Stir in reserved syrup, orange juice, orange zest, brandy, brown sugar, salt, pepper, ginger and nutmeg. Transfer to a 2 quart casserole dish; set aside.
In a separate bowl, stir together all praline toppings and spread evenly over top of casserole.
